    Butcher’s by Roli Roti Bone Broths Now Available at Costco

    Roli Roti, the Bay Area food truck turned artisanal food production company, will offer the newest items in its line of premium products, Butcher’s by Roli Roti Bone Broth at 36 Costco stores in Northern California and Nevada.

    Never frozen, Butcher’s Organic Bone Broths are made simply, using just organic bones, organic carrots, and filtered water. With a commitment to source the best ingredients from responsible farmers who care, the team at Butcher’s developed Butcher’s Organic Bone Broths to use both as an easy-to-cook-with premium cooking ingredient and a nutritious stand-alone drink. Each bottle is slowly simmered for 24 hours to extract as much from the bones as possible, resulting in a broth that is packed with 21% daily value of protein per serving and a dense and “jello” like texture due to the high amounts of gelatin and collagen.

    The broths are Paleo & Keto CERTIFIED by Paleo Foundation and Keto Certified. The broths have no alliums, no salt added, are fresh and sourced from farms that have earned Global Animal Partnership (GAP) certification.

    Autumn Pumpkin Chili

    This recipe comes from Roli Roti’s friend Lauren O’Connor, a registered dietician, nutritionist, and yoga instructor! As we fall into fall, she’s shared a recipe using one of our favorite autumn ingredients: pumpkins!
    Here’s what Lauren had to say:

    This satisfying, veggie-ful Pumpkin Chili is a perfect choice for the fall. The balance of ginger, cumin and turmeric add warmth and earthiness to the dish; each containing anti-inflammatory, healing qualities. Sumac adds a tangy, zesty appeal. No onions, no garlic, no spicy peppers — no problem! This acid-watcher friendly dish provides the warmth and full-bodied richness of a zesty chili (without the fear for heartburn). So if you’ve got GERD, or chronic acid reflux, this one’s for you! (Just swap the bell peppers for chopped cooked rainbow carrots if they are are trigger food). 

    Serves 3

    INGREDIENTS:

    • 1 cup celery, chopped
    • 1 Tbsp Grapeseed oil, divided
    • 1/4 tsp Herbamare Sea Salt with Vegetables and Aromatic Herbs, divided
    • 1 cup canned pumpkin
    • 1 cup Roli Roti Butcher’s Chicken Bone Broth
    • 1 cup red, yellow, green bell peppers*, sliced, divided (or *chopped cooked rainbow carrots)
    • 1 cup frozen corn kernels, divided
    • 2 tsp raw ginger, grated
    • 1 tsp Sumac, ground
    • 1/4 tsp cinnamon, ground
    • 1/4 tsp turmeric
    • 1/2 tsp cumin, ground
    • 1 cup black beans, canned, drained

    DIRECTIONS:

    1. In a skillet, heat 2 tsp grapeseed oil with 1/8 tsp Herbamare or your favorite sea salt.
    2. Add celery and toss to coat.
    3. Heat on low-medium covered until celery is soft; add 2 Tbsp of the Butcher’s Chicken Bone Broth to keep celery from sticking to pan.
    4. Add pumpkin, remaining Butcher’s Chicken Bone Broth, 1 tsp Grapeseed oil, 3/4 cup of bell peppers, 3/4 cup of corn, ginger, Sumac, cinnamon, turmeric, cumin and remaining Herbamare sea salt and continue to heat until warm.
    5. Transfer to a high speed food processor and puree until smooth 3-5 minutes.
    6. Return to skillet and stir in black beans, remaining bell peppers and remaining corn.
    7. Heat until thoroughly warmed.

    Green Bone Broth Smoothie

    This smoothie will leave you feeling extra satiated thanks to the added protein from the bone broth. Paired with the stomach-calming ginger and digestion-aiding chia seeds, this smoothie is a great way to fill up on your veggies all while healing your gut. It’s a great way to jumpstart your digestive system in the morning, and so easy to make!

    Serves 1

    INGREDIENTS:

    • 3 Roli Roti Chicken Bone Broth ice cubes
    • ½ avocado
    • 1 cup fresh spinach
    • 1” piece ginger
    • 1” piece turmeric
    • 1 cup almond milk
    • Juice of ½ lime
    • ½ tsp chopped almonds
    • ½ tsp chia seeds

    DIRECTIONS:

    1. Place Roli Roti Butcher’s Chicken Bone Broth ice cubes, avocado, spinach, ginger, turmeric, almond milk, and lime juice into a blender and blend until smooth.
    2. Pour into glass and top with chopped almonds and chia seeds. Serve immediately.

    My husband Ryan made chicken soup pho with Roli Roti’s Chicken Broth tonight, it was soooooo delicious. I literally had two bowls by myself. But you know it’s full of healthy protein! I love it!
