Cupid’s Chocolate Pudding Mini Tartlets

Ingredients:

• Absolutely Gluten Free Coconut Chews, flavor of choice
• Instant pudding, flavor of choice
• Ingredients to make instant pudding as directed on packaging
• Toppings such as sliced bananas, strawberries, shaved chocolate, etc.

Equipment needed: Mini cupcake pans or muffin tins

Directions:

1. Preheat oven to 350°F.
2. Carefully flatten each Coconut Chew to about 1/3-inch thickness using a rolling pin or a hard flat cooking utensil.
3. Gently press each Coconut Chew into your mini cupcake pan using your fingers until it conforms to the shape. If using a larger muffin pan, press two Coconut Chews together for each cup.
4. Place on a baking sheet and into the oven for about 10 minutes, just until golden brown. When finished baking, the back side of a small spoon may be used to make an indentation in the center of each pan. Allow to cool slightly and remove from mold. Cool completely before filling with pudding.
5. As the Coconut Chews cook, make the instant pudding according to the directions of the package. Allow to set as indicated, then fill a resealable plastic bag with pudding. Cut a small corner off the bag and pipe into each Coconut Chew crust.
6. Place desired topping on each tartlet as garnish.
