    Celebrating National Plant a Flower Day With Nature’s Path Gardens For Good Program

    Today marks National Plant a Flower Day, an opportunity to get outside with the kiddos and plant something beautiful.

    In honor of getting our hands in the dirt and spreading awareness on the benefits of cultivating a garden, Nature’s Path’s efforts to support community gardens across the US and Canada. Through their annual Gardens for Good Program, Nature’s Path is honoring the wonderful work community gardens are doing across the US and Canada to bring healthful, homemade meals onto the table in areas dealing with food insecurity.

    Access to affordable, fresh food has become increasingly challenging for many communities during the last year, and to address the challenges of food system, Nature’s Path has expanded their Gardens for Good program to support 21 gardens with $5,000 each, more than seven times the number of gardens supported in previous years.

    Nature’s Path – North America’s largest certified organic breakfast and snack food company – is significantly expanding their annual Gardens for Good Program to help recognize the wonderful work community gardens are doing across the US and Canada. Nature’s Path will support 21 community gardens with $5,000 each. Applications are accepted starting on February 5th, with special focus on gardens founded by and serving, Black, Indigenous and communities of color.

    “We believe fresh, nutritious food should be accessible to all, and we are deeply troubled that the reality of our food system does not reflect this,” said Jyoti Stephens, VP Mission and Strategy at Nature’s Path. “Due to the pandemic, access to healthy, fresh food has become even more challenging. That’s why we decided to expand our grants to reach seven times the number of gardens we have supported in previous years. We believe community gardens feed more than just bellies, but also people’s hearts and souls.”

    According to the United States Department of Agriculture Economic Research Service, in the U.S. alone, over 23 million people live in areas with reduced access to affordable, fresh food, half of which are considered low-income. Gardens for Good was created in 2010 to support the amazing impact local community gardens have in all neighborhoods, but especially ones with limited access to fresh foods. Every year since its inception, Gardens For Good has provided three grants to nonprofit organic community gardens. This marks the first year Nature’s Path has expanded their contributions to 21 gardens.

    Since the program’s inception, Nature’s Path has donated over $400,000 and supported 27 community garden projects. The beneficiaries of their support primarily include areas where affordable, nutritious foods are not widely available. Previous winners include The YAM Project in Sudbury, Ontario; Growing Roots in Pomona, California; Garden Joy in Ripon, California, among many others.

    Applications for the program can be submitted through www.naturespath.com/gardensforgood and promoted for votes through April 7th. Winners will be selected on National Gardening Day (April 14th).

    Creamy Guacamole

    This two-step process makes it super easy to throw together creamy guacamole whenever the urge strikes. The key to a great guacamole is a combo of very ripe (but not over ripe) avocados and a blend of sharp garlic, salt, the tang of freshly squeezed lime juice, and the grassy taste of fresh cilantro. Stir in a cup of creamy mayonnaise — this recipe has obviously partial to Primal Kitchen’s mayo made with avocado oil—and prepare your tastebuds for the creamiest, richest guacamole you’ve ever tasted.

    Ingredients

    • 4 ripe avocados
    • 1 large clove garlic, minced
    • 2 tablespoons lime juice
    • 1 teaspoon salt
    • 2 tablespoons cilantro, chopped
    • 1 cup Primal Kitchen Pesto Mayo

    Hummus with Avocado Oil

    A classic dip to add flavor, contrasting texture, and more satisfaction to snacks like cut fresh vegetables, and flaxseed, rice, and other gluten-free crackers, hummus can be thrown together in a blender with pantry ingredients in five minutes or less. If you don’t have fresh lemons on hand, substitute bottled lemon juice or go without it. You may need to add a bit more water if you leave out the lemon juice to make sure the hummus has the right consistency.

    Classic hummus, which is made with chickpeas, does have a higher amount of carbs than other paleo or keto snacks (such as additive-free salami, organic full-fat cheeses, olives, nut butters, coconut oil, etc.), so pay attention to portion size if you’re watching your carbs.

    Ingredients

    • 3 cups chickpeas (drained if canned)
    • 1/4 cup Primal Kitchen Avocado Oil
    • 1/2 cup tahini
    • 1/4 cup water
    • 1/4 cup lemon juice
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground cumin
    • 2 cloves garlic, peeled

    Instructions

    • Place all ingredients in a blender or food processor. Pulse three times for 2 seconds each time.
    • Continue blending on medium until desired consistency is achieved.
    • Remove hummus from the blender and spoon into a bowl.
    • Serve with cut vegetables, flackers, or gluten-free crackers.
    • Store any unused hummus in an airtight container in the refrigerator for four to five days.

    Teriyaki Cauliflower Bites

    Tender on the inside, toasty brown on the outside with a bit of coarse texture from the light dusting of almond flour, this teriyaki cauliflower bites provide the perfect pop-in-your-mouth snack or vegan side dish. This easy two-step keto-vegan breading process includes a dunk in the sweet, savory, tangy, umami Island Teriyaki Sauce before a toss in salted almond flour—then it’s into a hot oven to bake for about 30 minutes. Whole30, vegan, paleo, and keto appetizers don’t get much easier than this; serve with the vegan or regular Ranch dressing to add a creamy, herby, ready-made sauce.

    Instructions

    • Preheat oven to 400ºF. Line two baking sheets with silicone mats or metal racks.
    • Wash cauliflower and dry. Remove any leaves and cut away the stem. Cut the cauliflower into florets.
    • Mix almond flour and salt together in a large bowl. Pour the Island Teriyaki Sauce into a separate large bowl.
    • Add the cauliflower florets (in batches, if necessary) to the bowl with the Island Teriyaki Sauce. Use tongs to toss and coat well.
    • Use tongs to place sauce-covered cauliflower florets into the bowl with almond flour. Toss well to coat.
    • Place the lightly breaded cauliflower bites onto the baking sheets in one single layer.
    • Bake for 25–30 minutes, or until tender and browned.
    • When done, transfer the cauliflower bites to a large plate and serve with Primal Kitchen Vegan Ranch for dipping, if desired.

    Primal Kitchen’s Keto Friendly Spicy Chicken Sandwich Just Joined The Spicy Chicken Sandwich Battle

    The battle of crunchy friend chicken sandwiches hasn’t finished yet. Which one is your favorite, Chick-fil-A or Popeyes, or KFC? I guess there is no one that you can try if you are on a keto diet. But what you can do is to make a keto friendly chicken sandwich at home with Primal Kitchen’s Mayo with Avocado Oil and Buffalo Sauce.

    This recipe’s spicy chicken sandwich is keto friendly, thanks to a keto bun, pork rind-coated chicken tenders, and a mix of our Keto Certified Buffalo Sauce and Mayo with Avocado Oil. It’s a keto version of a Nashville hot chicken sandwich, but one that can be made easily anytime at home. If you don’t have or don’t want to use keto-friendly bread, this savory, crunchy, sour, spicy sandwich can be made into a wrap—collards or romaine provide a sturdy enough leaf to contain the heft.

    Ingredients:

    • Preheat oven to 400ºF.
    • In a food processor, pulse pork rinds until they are the consistency of bread crumbs. You can also place pork rinds and parmesan into a plastic baggie, seal it, and pound it into small bits using a rolling pin.
    • Pour crumbs into a tray or a large plate. In a medium-sized saucepan over medium heat, melt butter or ghee. When melted, pour butter into a tray or large plate.
    • Coat chicken tenders in butter, and then coat in crumb mixture. Press as much coating onto each breast as possible. Bake chicken for 20 minutes, or until fully cooked (to be safe, insert a meat thermometer in the thickest part of the breast. The internal temperature should be 160º when fully cooked.).
    • Dilute mayo with water; stir and set aside.
    • Assemble the keto spicy chicken sandwiches. Split the buns apart. Tear each large piece of iceberg lettuce into 2 smaller pieces, and place 1 piece on top of each bun bottom. Layer 2 chicken tenders on top of each piece of lettuce, drizzle on some buffalo sauce, add 2 more chicken tenders on top, and drizzle with more buffalo sauce. Add 2 pickles then 1 more piece of lettuce. Spoon on mayo, another 2 pickles, then the tops of the buns to close the sandwich.

    Keto Friendly Zucchini Fries
    (make your sandwich meal to a combo!)

    Ingredients

    Instructions

    • Preheat oven to 425ºF.
    • Cut the ends off of each zucchini. Cut each zucchini in half lengthwise, and cut each half into quarters. Cut each zucchini quarter into matchsticks (the size and shape of fries).
    • Add 1 cup grated parmesan cheese, dried herbs, garlic powder, almond flour, and salt to a bowl or glass container.
    • In a separate bowl or glass container, whisk together eggs with a fork until they are well combined.
    • Dip each zucchini matchstick in the eggs a few times, then dip into the cheese and flour mixture a few times until well coated. Place the zucchini fries on a parchment-lined baking sheet spaced apart in one layer. Repeat coating process until all matchsticks are coated.
    • Bake zucchini fries for 30 minutes. Remove from oven and serve with Primal Kitchen Rosemary Garlic Vegan Mayo or Primal Kitchen Organic Unsweetened Ketchup.
