Delicious and Gluten Free Treats from Rudi’s Organic Bakery

Rudi’s Organic Bakery has a ton of gluten free breads! I used their Ciabatta Rolls to make these tiny chicken sandwiches for lunch with a side for coconut oil fried plantains! These buns are crisp on the outside and soft on the inside. Ready in just 8 mins in the oven and a really easy quick hot lunch.

These are revolutionary!! The Rudi’s Gluten Free Cherry Almond bars taste like… Cheesecake. OMG They are delicious and healthy and obviously got eaten up really really fast. These moist and chewy delights are baked up right, with real, whole ingredients, 3 grams of protein and 2 grams of filling fiber to keep you going strong all day long.

Rudi’s also has a range of sandwich breads that are gluten free! They come in cinnamon, multi grain and original. I love it toasted with butter or grilled as a panini. Rudi’s have worked with the bread to make it just like normal bread but better! Gluten-Free goodness that’s softer, fluffier, and yummier than ever. We’ve rethought, reworked, and remade all of our Gluten-Free Sandwich Breads because we believe taste is everything. How did the Yasso brand get started? Read the story below:
In July of 2009, Amanda and Drew teamed up after she was introduced to the idea of making frozen Greek yogurt while working as a food broker for her father, Stu. The two former Division 1 athletes embarked on a journey from scratch to create a good-for-you product of the highest quality in the frozen novelty category. After a degree from Ice Cream Camp (yep, seriously), countless road trips and over a year of research and development, they executed their first production run in September.
The first order of Yasso was delivered in March 2011. Amanda and Drew immediately focused their attention on in-store promotions, sampling, charity events, and social media. Consumers quickly became loyal fans, and Yasso was growing rapidly. Now staffed with a team of fun and energetic people, Yasso has become one of the fastest-growing novelty brands in the country. As they look to the future, Yasso will continue to create products that are delicious, nutritious, and authentic…the same values Yasso has had since its inception.

Cure your Post-Thanksgiving blues with @Nasoya Tofu Tandoori Masala
If you need a break from Thanksgiving leftovers, I’ve got a great recipe for you to help switch things up: Tofu Tandoori Masala.
Though the original recipe calls for chicken or fish, I decided to take a new, even healthier approach with tofu. I used a package of Nasoya Organic Extra Firm TofuPlus. The consistency was perfect for this recipe and it tastes delicious, plus it’s fortified with vitamins B2, B6, B12, D and Calcium.
I took the tofu out of its packaging and padded it dry with a paper towel before cutting it into six 1/2 inch pieces. In a large ziplock bag, I prepared the marinade of plain yogurt (1 cup), lemon juice (4 tablespoons), ghee/oil (1/4 cup), cardamom (1 teaspoon), and Tandoori Masala spice mix* (a mixture of coriander, cumin, cardamom, ginger, garlic, cinnamon, chili, nutmeg, mace, paprika, star anise, and salt). Mix up all of these ingredients in the bag until well blended, then add the slices of tofu. Put the sealed bag in the refrigerator for at least a few hours, but I recommend leaving it overnight to really maximize the flavor.
After the marinade process is complete, remove the tofu slices from the bag and place them in a baking dish. I used some of the marinade to slightly submerge the tofu pieces and put it in the oven at 375 degrees for 45 minutes. I was also able to save and reuse the remaining marinade for another batch of tofu the next day. The results are so awesome, I completely forgot to take a photo of the final dish. Honestly, it was that good! The flavors from the spices and the creaminess of the tofu are an unbeatable combination.
There are four types of Nasoya TofuPlus including Organic Extra Firm TofuPlus, Organic Sprouted TofuPlus, Organic Black Soybean TofuPlus, Organic Firm TofuPlus. I can tell you from experience that all of them are very tasty and a great substitute for meat. More information and recipes can be found at nasoya.com.
*The original recipe was provided by the good folks at one of my favorite small spice shops on Manhattan’s 1st Avenue called Dual Specialty Store. They’ve got all sorts of spices, teas, and other treats you may have never known existed and it’s totally worth the visit if you’re into obscure ingredients and experimenting in the kitchen. If you’re in New York, I highly recommend picking some up there, but you can also find a recipe online (like this one here) or order it directly from Dual Specialities online.

Breakfast with @taftfoods Vegetarian Seitan Gryo and Sausage
Vegetarian Seitan Gryo and Sausage sounds yummy! I finally had the chance to try these meat alternatives products and I was really surprised! The biggest difference from meat is the actual texture but the taste and how easy it was to prepare made me really happy!
Seitan {say-tan}, although made from wheat, has little in common with flour or bread. Also called the “meat of wheat,” seitan becomes surprisingly similar to the look and texture of meat when cooked, making it a popular meat substitute. Seitan is also high in protein, making it a popular protein source.
Seitan comes from the Japanese words “sei,” meaning “to be, become, made of,” and “tan,” as in tanpaku, which means “proteins.” Freely translated: “made of proteins.”
More than 1,000 years ago, seitan was prepared by Zen Buddhists in China as a substitute for meat or fish. Although seitan was first developed in China, it has historically been very popular in the cuisines of Japan and other East and Southeast Asian nations.
Since the mid-20th century, seitan has been increasingly adopted by vegetarians in Western nations as a meat substitute. Seitan is quickly gaining popularity, particularly in mainstream restaurants, due to its ability to take on the texture and flavor of meat.
As more people are looking to improve diet, seitan is becoming a healthy alternative for non-vegetarians as well.
Taft’s seitan is made by hand and seasoned for today’s international tastes! It comes to you frozen and already cooked; literally, a heat-and-eat item. Simply heat our seitan to serving temperature and to add texture. All of our products heat in less than 60 seconds on stovetop, or in 15 seconds by microwave. Our products are available through direct shipping or via distribution.
With blueberry pancakes – this was the perfect breakfast!

All You Need for Cherry Season
Cherry season is here! One of the best fruits of summer, I was so excited when I saw cherries for sale at the market this weekend. My grandma has a cherry tree in her yard and every summer we picked them before the birds could eat them all. Cherries, like peaches and apricots have pits in them. This makes them difficult to put in a smoothie, baking recipe or any desserts. I always used raspberries or strawberries as an option in those situations but now I don’t have to! If you are a cherry love like me, you HAVE to get the CHERRY CHOPPER.

This is a cherry pitter and works the way a hole puncher does. It collects all the pits on the bottom and is the most adorable addition to my kitchen recently.
It is by far the fastest and easiest way to pit cherries. The Cherry Chomper is also dishwasher safe. The key to making this work the best is the place the cherry stem side up and at the center of the device.

If you want to bake but you are way too lazy to get fresh cherries, you can use Cherry Man Maraschino Cherries. I recently got to try these and they are fantastic! They are ALL natural and taste different then what you buy in the baking aisle at the supermarket. Cherry aficionados can happily reach into a jar of red jewels with complete abandon knowing the sweet treat is fat-free, gluten-free, sodium-free, kosher, contains no high-fructose corn syrup, and has just two grams of sugar per cherry.
Each jar of Farm to Market Maraschinos™ has a unique QR code that can be scanned to reveal the exact origins of the fruit and the story behind the growers. CherryMan cherries are primarily supplied by family farms in the Northwest corner of Michigan as well as Oregon’s Willamette Valley. Some of these families have their roots in agriculture dating back to the 1800s and orchard sizes range from less than five acres to more than 200. So whether you’re mixing up a Manhattan or creating the perfect banana split, these cherries are homegrown in the USA.
I used them to make Almond Cherry bread in muffin tins today. YUM!

Hope you have a cherry filled summer 😀
