I have been held my sweet tooth the whole year for the holidays. I believe a lot of people are like me. No time is better than holidays to eat tons of sweets! Check out these delicious cranberry dessert recipes from Cape Cod Select. Everyone loves cranberry! Here are some easy recipes to make your holiday party a real sweet one!
Cape Cod Select has been working with food bloggers who have so much creativity and the talent to execute an amazing looking and tasting recipe. Amanda of @Stir.taste.smile took on Cape Cod Select‘s frozen cranberries and turned them into these awesome Cranberry Pop-Tarts! These pastries will be a hit with kids and adults alike. The sprinkles really make for a fun looking treat.
Start by making the cranberry filling. Add frozen cranberries (do not thaw), sugar, orange juice, orange zest, and spices in a medium saucepan. Bring to a boil and then let simmer for 15-20 minutes until liquid is almost gone. Whisk 2 tsp. of cornstarch with 2 tsp. of cold water until combined and slowly add it to the cranberry mixture. Stir until it thickens, remove from heat and let cool. Place in the refrigerator until cool.
Preheat oven to 400F.
Using the 2 thawed puff pastry sheets, cut each sheet into 6 rectangles, 12 in total. Fill half of the rectangles (6) with 2 tablespoons of cranberry filling. Egg wash the edges of the filled sheets. Lay the remaining 6 rectangles on top of the filling and seal using a fork. Egg wash the tops and place in the oven on a parchment lined baking sheet. Bake for 20-22 minutes or until golden brown.
While pop-tarts cook make your glaze. Whisk together powedered sugar, orange juice, and vanilla extract until smooth.
Remove pop-tarts from the oven and allow to cool. Glaze tops and top with sprinkles and enjoy!

Cranberry Goat Cheese Parfait
Easy No Bake Recipe!
As you know Cape Cod Select loves working with talented food bloggers like Maria of Sweet Fix Baker to create new and exciting recipes for you! This recipe is perfect for any event and is so easy to make. You don’t even need to turn your oven on! And how good does Cranberry Goat Cheese Parfait’s sound?
1. In a medium sized sauce pan, combine cranberries, sugar, 1/4 cup of water, lime zest, lime juice and vanilla extract. Turn heat to medium high and let the ingredients cook for 8-10 minutes, until sugar is dissolved and cranberries release their juice. Cranberries need to be soft, but not mushy. Add the cornstarch diluted in water, mix and cook for an additional 2-3 minutes. Let cool completely before assembling your parfait. Compote will thicken as it cools.
2. Freeze a metal bowl and whisk attachment for 10 minutes. Whip heavy cream until stiff peaks form and set aside.
3. Beat the softened goat and cream cheese on medium speed, until smooth and creamy, making sure no lumps are left. Add powdered sugar, vanilla extract and salt and mix until well incorporated. Fold in whipped cream with a spatula. Refrigerate while doing the rest of the recipe.
4. Mix all of the graham cracker crumbs, crushed walnuts and butter until butter covers everything and mixture resembles wet sand.
5. To assemble, place a layer of graham cracker crumb mix, then place on top a layer of goat cheese cheesecake. To top, add a layer of cooled cranberry compote.
Notes
1. Remove cream cheese and goat cheese from the fridge 1 hour prior to using

Cranberry Orange Donuts

Kayla Burton of Broken Oven Baking Company has created a delicous Cranberry Orange Donut recipe that you can recreate at home! Follow the simple steps and enjoy homemade donuts anytime you’d like with frozen Cape Cod Select cranberries available year round.
Cranberry Orange Donuts:
1.Preheat oven to 350° F and grease a donut pan.
2. In a medium bowl, whisk together the flour, baking soda and salt. Add the cranberries to lightly coat them with the flour mixture.
3. In a large bowl, mix together the butter and sugar. Stir in the orange zest, egg, vanilla extract and sour cream.
4. Fold the dry ingredients into the wet ingredients just until combined, then gently stir in the milk.
5. Spoon or pipe batter into the prepared donut pan, about ⅔ full (makes about 7 thick donuts but quantity will vary depending on donut size).
6. Bake donuts until they’re light tan around the edges and spring back when lightly pressed (about 15-25 minutes).
7. Let donuts cool in the pan until it’s just warm to the touch. Then take them out and let them finish cooling on a wire rack.
Orange Glaze:
1. In a medium bowl, whisk together the powdered sugar, butter and orange juice.
2. Dip the cooled donuts into the glaze and cover with sprinkles (optional).

Ingredients
1-1/2 sticks butter, room temperature
3/4 C. powdered sugar
1 C. Mighty Sesame Tahini
2 tsp. kosher salt
2 C. flour
Toasted sesame seeds
Sprinkles of your choice, optional
Parchment paper
Directions
- In a medium bowl beat butter, sugar and tahini for 3-4 minutes until creamy. Add salt and flour and beat on low speed until combined, scraping bowl from time to time.
- Mix sesame seeds and colored sprinkles together and pour them out on a small baking sheet or flat dish.
- Carefully knead the dough and shape into two tubes of equal size. Carefully roll each dough onto sesame seeds until fully covered.
- Roll each dough tube with parchment paper, twisting the ends and refrigerate for 2 hours or longer.
- Pre-heat your oven to 350F and remove dough from refrigerator. Cut into 1/4-inch coins and place onto baking sheet.

Mighty Sesame Tahini
Ingredients
5 tbsp extra virgin olive oil
30 oz black beans (2 15-oz cans)
1/3 cup pourable sesame tahini
2 limes juiced
1 dry chile guajillo
1 dry chile ancho
1/2 bunch cilantro
Directions
- First, toast the chiles. To do this, place them in the middle of a 8×8 square of aluminum foil. Fold the sides up to enclose the chiles in a package so that all the odor stays inside the package. Place the package directly on your oven rack. Bake at 400 for 10 minutes until the chiles have blackened slightly.
- Next, open the cans and drain the black beans. Place them in the blender.
- Add the lime, tahini, olive oil and salt, cilantro and toasted chiles.
- Blend until smooth and creamy.
- Top with optional garnishes.

½ vegetable oil
¾ cup honey
¾ cup tahini
1 ½ t baking powder
1 ½ t nutmeg
2 cups AP flour, sifted
½ cup sesame seeds
1 cup warm water
1 T butter, room temperature
Directions
- Preheat oven to 350 degrees. Grease 9×13 cake pan with butter.
- In a bowl, combine oil, honey, tahini and water. Mix well.
- Slowly add flour, baking powder and sesame seeds. Mix well with electric mixer on low speed to incorporate all ingredients.
- Pour into greased cake pan. Bake for 35-40 minutes or until a took pick comes out clean when coffee cake is pierced.
- Remove from oven and let cool for 15-20 minutes.
- Slice and serve.
- Enjoy!

Eugene’s Dill Smoked Salmon
Prep: 5 min | Total: 1.5 hours
Serves: 2Ingredients
- 12 oz wild Alaskan coho salmon
- 1 oz dill weed
- 1 alder wood plank
- 3 oz spicy sesame seed oil
- Salt to taste
Directions:
SEASON SALMON
Place the salmon in a large bowl and top it will all of the oil, dill and some of the salt. Let it sit for 20-35 min.
PREP THE GRILL
Fire up a grill or smoker and char the wood plank on both sides. If not using a smoker, place some soaked wood chips in a vented aluminum foil pouch on the hot coals. Set up the grill or smoker for low heat – 180° F for the smoker, or indirect heat with a small amount of coals on a grill.
SMOKE
Place the salmon on the plank then on to the grill or smoker. Smoke for 90 mins at 180° F in the smoker, or between 20-35 mins on the grill.
Eugene’s Tip: This smoked salmon is perfect to top salads with or to make into salmon burgers.

Quick-Cured Coho Salmon Appetizer Bites
Prep: 10 mins | Total: 40 mins
Ingredients
- ½ lb coho fillet, skin removed and cut into ½ inch cubes
- 3 tbsp salt
- 2 tbsp sugar
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 small shallot, minced
- juice of ½ lemon
- 2 tbsp capers, chopped
- 2 tsp horseradish
- 1 tbsp chives, minced
- 1 tsp dill, chopped
- salt & pepper to taste
- crackers for serving
Directions:
Toss coho cubes with the salt and sugar. Cure the salmon cubes in the refrigerator for 20-30 minutes, then rinse and pat dry.
Combine sour cream, mayonnaise, shallot, lemon juice, capers, horseradish, chives and dill. Season with salt and pepper to taste.
Spoon some sauce on crackers and place 2-3 pieces of salmon on top, or lay out a spread of salmon bites, sauce, and crackers for guests to build their own. Garnish with chopped parsley or chives.
Dara’s pro cooking tip: Have these appetizer bites ready when friends and family arrive, and serve with glasses of brut prosecco.

Joe’s Herb Grilled Lingcod
Prep: 24 hours | Total: 24 hours
Serves: 4Ingredients
- 1 pound lingcod, cut in 3-4 pieces
- 2 tablespoons chopped fresh thyme
- 2 tablespoons chopped fresh chives
- ¼ cup olive oil
- 1 squeeze fresh lemon juice
- ½ teaspoon salt
- Cracked black pepper to taste
- Optional: 1 container of sundried tomato pesto (We like Trader Joe’s)
Directions:
MARINATE
Combine fish, chives, thyme, olive oil, lemon juice, salt and black pepper in a 1-gallon ziplock bag. Marinate in fridge overnight.
GRILL
Heat gas or charcoal grill to medium-high heat. Oil grill grates well to prevent sticking. Grill for 3 min. a side for thinner pieces or 7-8 min. a side for thicker pieces.
SERVE
On the boat, Joe serves this with rice. We also love it with roasted potatoes and salad.
Joe’s pro cooking tip: Start grilling the thicker pieces of lingcod first. You’ll know the fish is done when it flakes with the gentle press of a finger.

Vegan Fettuccine Alfredo

- 1 lb. eggless fettuccine
- 1 Tbsp. BetterBody Foods Refined Avocado Oil
- 1/2 yellow onion, diced
- 1 Tbsp. minced garlic
- 5 cups cauliflower florets
- 1 cup vegetable broth

- 1/3 cup nutritional yeast
- juice of 1 lemon

- 6 small Portobello mushrooms, cleaned and sliced
- 1 bunch of asparagus, cut in 2″ pieces (about 2 cups)
- 1 small red onion, sliced
- 2 Tbsp. minced garlic
- fresh basil for garnish
Directions
- Heat oil in a large sauté pan over medium heat. Add onions and garlic and cook for about 3 to 5 minutes.
- Add cauliflower and broth, cover and cook for 6 to 8 minutes, until cauliflower is soft.
- Transfer to a blender, add Oatsome, nutritional yeast, lemon, salt and pepper, and blend until smooth and creamy.
- Cook fettuccine in boiling water until al dente, approximately 8 minutes. Drain and set aside.
- While pasta is cooking, heat oil in a large skillet over medium heat. Add onions and cook until golden. Add mushrooms and garlic and cook for approximately 6 – 8 minutes, until mushrooms are golden brown. Add asparagus and cook for 2 minutes.
- Turn heat to low. Add pasta and alfredo sauce and toss until pasta is coated.
- Top with fresh basil and serve immediately.
For Your Dinner
Chicken in Oat MilkCalories: 416 Fat: 12G Carbs: 15G Fiber: 1G Protein: 68GIngredients- 1/4 cup BetterBody Foods Refined Avocado Oil
- 1 organic free-range chicken (approx. 3 lbs)
- 1/2 cinnamon stick
- 1 handful fresh sage, leaves only

Directions
- Preheat the oven to 375°F. Season chicken generously with salt and pepper and pan fry it in the oil, turning the chicken to get a golden color all over. Remove from the heat, put the chicken on a plate, and throw away the oil left in the pot.
- Put your chicken back in the pot with the rest of the ingredients, and cook in the preheated oven for 1 1/2 hours. Baste with the cooking juice when you remember.
- Serve with quinoa and vegetables, and drizzle with sauce.
