These T-Shirts are Raising Money for Celiac Disease Research
Summertime calls for BBQs, dining out, brunch with friends, and more. Summer and food seem to be intertwined, but what can be a fun experience for most can be a daunting experience for those with food allergies.
Meredith started the t-shirt brand Celiac Cutie to bring about fun, laughter and empowerment to those affected by an autoimmune disease, as well as other challenges. A portion of all t-shirt sales goes back to the Celiac Disease Center at Columbia University, where she personally found help after her diagnosis.
The Celiac Disease Center at Columbia University Medical Center is one of a few centers in the United States that provides comprehensive medical care, including nutrition, for adult and pediatric patients with celiac disease and is diagnosing and treating thousands of patients annually from around the world.
Celiac Disease is not curable, which means those affected by this disease will have to avoid eating gluten their entire lives.
Here are some quick facts about Celiac Disease and why we should all work to give back to those affected by this autoimmune disease:
- About 1 in 100 people — about 1 percent — have celiac disease
- It is estimated that 83% of Americans who have celiac disease are undiagnosed or misdiagnosed with other conditions
- A 100% gluten-free diet is the only existing treatment for celiac disease today.

Gluten-Free Chef Caroline Byron Launch Event for New Book Gluten Free, Naturally
On Monday, June 18, gluten-free chef Caroline Byron celebrated the launch of her new book Gluten Free, Naturally, at the Ladurée Private Garden in Soho in NYC. Attendees included actress Ana Villafañe (best known for her portrayal of pop icon Gloria Estefan in the Broadway musical On Your Feet!), designer Carly Cushnie (of Cushnie et Ochs), and Vogue editor Edward Barsamian.At the summer soiree, guests sipped custom cocktails, tried delicious gluten-free canape’s created by Caroline Byron and tasted delectable macaroons by Ladurée.
After contracting Lyme Disease at the age of 10, Caroline Byron has battled with health problems for much of her life. While this didn’t stop her from forging a successful modeling career and retraining as a chef, Caroline became increasingly frustrated by these health issues. She decided to completely overhaul her diet and go gluten-free. The change in her health was astonishing.
Since then, she has devoted her time to developing a range of delicious recipes that are all naturally free from gluten, showing that you can enjoy a wide range of foods without resorting to pre-packaged ‘free-from’ items. Her skills as a chef and genuine love of food have led her to create a balanced collection of dishes, where the focus is on flavor and enjoyment as well as health. Although she includes healthy broths and probiotic smoothies, Caroline also finds space for her much-loved Gluten-free Fried Chicken and Melting Mac and Cheese, as well as a wide variety of baking recipes. Chef @CorrineTrang opened our sensory world at the second annual NY Press Preview for Thai Kitchen this past week! Thai Kitchen is absolutely fabulous and the event totally blew our minds. All the press that attended were all smiles. The amazing tasting, the impeccable decor and the knowledgeable staff and chef Corrine make everything perfect.
Piña colada mousse minis are made with TK coconut milk!
The delicious noodles come in a huge range and colors and I can’t wait to cook up a storm!
With a huge bag of goodies and so much inspiration, this is by far this has been one of the most organized and perfect events I have ever attended! Great job everyone 🙂
