HCB #44: bout my GREEN!
After my delish cauliflower balls, I decided it was time to make more; only this time I used spinach! I usually only have spinach steamed with garlic, so this was a welcomed and delicious change 🙂

HCB #43: Cauliflower Ballin!!
I had some cauliflower in the fridge, and even though I really didn’t want ANY cauliflower, I decided to have a little fun with it.
they were kinda YUMMY!About half way through my meal, I realized that they’d be even more perfect, if I dipped them in some… ranch sauce baby!!
Don’t judge me, I put ranch on like everything! TASTY!

HCB #42: the ending…
Remember my tis the beginning post? Well…here’s the ending!Let your dough sit for about an hour, make sure you knead it well, especially if you’re gonna be rolling it by hand… Then cut into four even pieces. I’d already rolled one out by the time I remembered to take the pic lolBaked some thinly sliced marinated eggplant… mmmBefore baking your butternut squash, make sure you poke some holes into it, and rub it down with some olive oil, salt and pepper.It took everything in me to not just eat it up when it was done baking! The flavor was so much more intense! DELICIOUSroll it out nice and thin 🙂measure and cut your lasagna sheetsI par-cooked them before assembling the lasagnaAssembly time!Oven time…EATING TIME!All I can say is DAMN. I know you’re not supposed to toot your own horn, but TOOT TOOT b*tches! The ish was f***ing amazing!! HCB #40: Veggie Macaroni Bake
I’m not sure if I’ve ever had pasta and eggplant together, but I was willing to try it, and LOVED it!I pre-baked the eggplant with some olive oil, garlic, oregano and some parm! YUM (used it as a base for my mac’ bake)FYI: Eggplant is an excellent source of dietary fiber. Very good source of vitamins B1, B6 and potassium. Good source of copper, magnesium, manganese, phosphorus, niacin, and folic acid. Nasunin, an anthocyanin from eggplant peels, is a potent antioxidant and free-radical scavenger, and has protective activity against lipid peroxidation.= WINNNER
I blanched the veggies first. Then cooked them lightly in butter, garlic, and onions with a touch of oregano before assembly.I used a bechamel sauce, that I infused with garlic, onion and bayleaf… Parmesan, provolone and mozzarella were my cheeses of choice.bake it till it’s golden delicious!My appetite might suck right now, but this will last me a couple days so I’m not worried.Happy Cooking lovies!♥Bella♥
