    HCB #43: Cauliflower Ballin!!

    I had some cauliflower in the fridge, and even though I really didn’t want ANY cauliflower, I decided to have a little fun with it.

    cook em, and mash em!
    decide how you want em to taste, and then make little balls
    A quick deep fry, and then finished in the oven
    they were kinda YUMMY!

    About half way through my meal, I realized that they’d be even more perfect, if I dipped them in some… ranch sauce baby!!
    Don’t judge me, I put ranch on like everything! TASTY!

    HCB #42: the ending…

    Remember my tis the beginning post? Well…here’s the ending!
    Let your dough sit for about an hour, make sure you knead it well, especially if you’re gonna be rolling it by hand… Then cut into four even pieces. I’d already rolled one out by the time I remembered to take the pic lol
    Baked some thinly sliced marinated eggplant… mmm
    Before baking your butternut squash, make sure you poke some holes into it, and rub it down with some olive oil, salt and pepper. 
    It took everything in me to not just eat it up when it was done baking! The flavor was so much more intense! DELICIOUS
    roll it out nice and thin 🙂

    All I can say is DAMN. I know you’re not supposed to toot your own horn, but TOOT TOOT b*tches! The ish was f***ing amazing!! I couldn’t possibly share just how long or rather how short a time it took me to polish off this BAD BOY!!

    HCB #41:Eat up!

    This made my belly WARM and full! Yum and Yum! My rice n peas are something SERIOUS. Trust. Lol.

    HCB #40: Veggie Macaroni Bake

    I’m not sure if I’ve ever had pasta and eggplant together, but I was willing to try it, and LOVED it!
    I pre-baked the eggplant with some olive oil, garlic, oregano and some parm! YUM (used it as a base for my mac’ bake)

    FYI: Eggplant is an excellent source of dietary fiber. Very good source of vitamins B1, B6 and potassium. Good source of copper, magnesium, manganese, phosphorus, niacin, and folic acid. Nasunin, an anthocyanin from eggplant peels, is a potent antioxidant and free-radical scavenger, and has protective activity against lipid peroxidation.= WINNNER

    I blanched the veggies first. Then cooked them lightly in butter, garlic, and onions with a touch of oregano before assembly.
    I used a bechamel sauce, that I infused with garlic, onion and bayleaf… Parmesan, provolone and mozzarella were my cheeses of choice.
    bake it till it’s golden delicious!
    My appetite might suck right now, but this will last me a couple days so I’m not worried.

    HCB #39: tis the begginning

    The beginning of something DELISH! 
    Make sure you knead it well, then let it rest for about an hour at room temp before rolling it out
    I haven’t yet decided what I wanna do with this pasta dough, but I know it’s gonna be tasty! I’m thinking something with some butternut squash. mmm YUM

    My appetite’s been pretty weird lately, and over the last couple days it’s pretty much disappeared… can’t seem to find it… 🙁

    But seeing as I don’t believe in starving myself, I gotta make sure I eat something!
    I loves me some peppers, cranberries, and I’m a sucka for ranch dressing, add some romaine lettuce to the mix, and it’s a winner! It’s also pretty filling!
