HCB #51: put that carrot in my coconut…

There are many great things that I learned during my time in chef school, and one of the many things that I learned and keep so close to my heart, is the art of making A DAMN GOOD SOUP. For some this doesn’t sound like anything special, but believe me when I tell you that there is an art to making a GOOD soup.

I cooked the carrots in soy and coconut milk, along with some garlic, onion and other special ingredients, then brought them together…
I used to HATE soup, and dreaded ANY and EVERY occasion that involved soup… until I went to chef school.
Anyway, this soup was the BOMB! It was like Christmas in Heaven… only in your mouth! Yes.

    peace and blessings

HCB #48: the ish is BANANAS!

I bought bananas barely a few days ago, and they were already looking like I should throw them out; but I wasn’t tryna waste food that I spent money on!
    So I made banana bread!
    Beautiful!
    soooooo GOOD!
    Happy Cooking!

    HCB #47: mmm pineapple ♥

Once in a young lifetime one should be allowed to have as much sweetness as one can possibly want and hold. ~Judith Olney
you gotta beat those eggs (and sugar) just right for the cake to have that nice moist texture
add some sweet crushed pineapple… mmm this cake is perfect for a beach picnic!
    I used pyrex jus coz…
pour a light pineapple syrup on it, dust a lil icing sugar over it; watch it seep in and… mmm DELISH! No need for icing, this cake’s got that good sweetness! … plus I gotta watch this waistline! lol
    Happy Cooking!

    HCB #46: Buttermilk heaven

I’m not a big breakfast eater… honestly, I find the whole breakfast routine to be rather tiresome.. I can think of a number of other things that I’d rather do, with that time spent on making breakfast in the morning… just saying. But, I know it’s the most important meal of the day bla bla bla; so I made buttermilk scones.

    I love making dough 🙂
roll it out to your desired thickness
    time to cut em out!
    egg wash those bad boys!
you know I’m a sucka for cranberries!

I just wake up, warm one up, put some butter on it and I’m gone. 2 minutes tops. Works good for me, more time to do other stuff 🙂
    Happy Cooking!

    HCB #45: eat this PIE…

“But I, when I undress me..Each night, upon my knees..Will ask the Lord to bless me..With apple-pie and cheese.”~Eugene Field
It was raining, I didn’t wanna watch TV or be on the computer so… LOL
gotta work that dough the right way… easiest dough to make ever
it should feel nice and firm but soft…
roll it over your pan (easier if you wrap the dough around the rolling pin and then lay it over the pan)
Before rolling, I cut the dough into two pieces; one for the bottom and one for the top…
easiest way to trim the excess is to roll the rolling pin over the pie
I pre-baked it for like a minute or two

apples just dying to just bust out the damn seams!
    poke some holes in it…

I gotta get some Vanilla Ice Cream first!
    stay tuned…

    HCB #44: bout my GREEN!

After my delish cauliflower balls, I decided it was time to make more; only this time I used spinach! I usually only have spinach steamed with garlic, so this was a welcomed and delicious change 🙂

    Some benefits for ya!
♥ Low in calories, high in vitamins and minerals, as well as other phytonutrients.
♥ Excellent source of Vitamin K, A, C, B2, B6, E; spinach is also contains magnesium, folate, iron, calcium, protein, zinc, fibre, and MORE! (it’s also super cheap!)

♥ Got some antioxidants in there, as well as 13 different flavonoid compounds that act as anti-cancer substances.
♥ Heart healthy and good for lowering high blood pressure.

“In comparison to red meat, spinach provides a lot less calories, is fat and cholesterol free, and an excellent source of iron. Because iron is a component of hemoglobin, which carries oxygen to all body cells, it’s needed for good energy.”-WH Foods

    mmm mmm GOOD 🙂
