    Chipotle REAL THIN Nachos – Bring Your Nachos to The Next Level

    Chipotle REAL THIN Nachos

    Prep Time: 15 minutes | Cook Time: 2 minutes

    INGREDIENTS

    • 1 cup shredded Mexican cheese blend
    • ¼ cup diced red onion
    • ½ cup diced tomato
    • ¼ cup black beans
    • 1 box Chipotle REAL THIN Crackers
    • 1 tbsp cilantro, chopped
    • Lime wedges

    PREPARATION

    1. On a parchment-lined baking sheet, spread out a layer of crackers. Sprinkle cheese, beans, diced onion and tomato on top.
    2. Place in oven under the broiler and watch carefully for 1-2 minutes until the cheese is melted. Remove from oven.
    3. Garnish with cilantro and lime wedges.

    Southwest Chipotle Salad

    Prep Time: 15 minutes | Cook Time: 15 minutes

    INGREDIENTS

    • 1 cup quinoa, uncooked
    • 2 cups vegetable broth
    • 2 tsp chili powder
    • 1 tsp onion powder
    • ½ tsp cayenne powder
    • ½ tsp salt
    • 1 clove of garlic, minced
    • 1 cup fire-roasted corn
    • 1 cup cherry tomatoes, halved
    • 1 avocado half, sliced
    • ¼ cup cilantro
    • 3 tbsp pepitas
    • Chipotle REAL THIN Crackers, crumbled
    • Chipotle dressing

    PREPARATION

    1. Mix the quinoa, vegetable broth, chili powder, onion powder, cayenne powder, salt and minced garlic together in a medium-sized saucepan. Bring the quinoa mixture to a boil, then reduce heat to medium low. Cover and cook until fluffy (about 10-15 minutes). When the quinoa is done cooking, remove it from heat. Now fluff it with two forks. Set aside to cool. Reserve a little bit of the fire-roasted corn, cherry tomatoes, avocado slices and cilantro for garnish.
    2. Once the quinoa has cooled, mix in the remaining corn, tomatoes, avocado and cilantro. As the finishing touch after garnishing, evenly scatter the pepitas and crumbled Chipotle REAL THIN Crackers over the top of the salad. Add chipotle dressing to taste. Serve and enjoy!

    CRISPY PANCETTA WITH GOAT CHEESE AND FIGS

    With Original Black Pepper Crackers

    INGREDIENTS

    • 6 whole ripe figs, rinsed, dried, and sliced
    • 4oz of plain goat cheese
    • 12 thin slices of pancetta cut in half lengthwise
    • 12 arugula leaves
    • 12 Original Black Pepper Crackers

    PREPARATION

    • Preheat oven to 400 degrees
    • Place pancetta in a single layer on a baking sheet
    • Bake pancetta until crisp *this can range from 6-15 minutes dependent on the thickness of the slices and the heat of the oven. We recommend keeping a close eye on them.
    • Drain pancetta crisps on a paper towel and cool (about 10 minutes)
    • On our Black Pepper Crackers, place the crispy pancetta, spread the goat cheese, and top with the fig slices and one arugula leaf

    INGREDIENTS

    • 2 heads of endives, sliced in half lengthwise
    • 3 apricots, pitted, diced
    • 1 log of goat cheese
    • 2 leaves of mint, torn
    • 4 tbs of glazed balsamic

    PREPARATION

    • Cut the endives in half and arrange on a plate
    • Pit and dice the apricots
    • Spread goat cheese in the endive boat
    • Sprinkle the apricots into each individual endive boat
    • Add torn mint leaves
    • Drizzle glazed balsamic

    VEGAN JALAPEÑO POPPER DIP

    INGREDIENTS

    • 2 8oz containers of vegan cream cheese
    • 1 cup vegan mayonnaise
    • 4 jalapeños, seeded and sliced
    • 2 cloves of garlic, minced
    • 1 cup vegan cheddar cheese shreds
    • Salt & pepper to taste
    • ¼ cup cracker crumbs (Sea Salt REAL Thin Crackers)

    PREPARATION

    • Preheat the oven to 425 degrees;
    • Mix all the ingredients together reserving ¼ cup of the shredded cheese and the cracker crumbs;
    • transfer to one large or several small baking dishes;
    • Top with the remaining cheese and cracker crumbs;
    • Reduce the oven temperature to 400 degrees before putting the dip in to bake for 20 minutes.
    • Remove from the oven and enjoy warm or cold.
