RUBIO’S COASTAL GRILL BRINGS CAULIFLOWER RICE TO THE MENU

On July 14, Rubio’s Coastal Grill will offer Cauliflower Rice in all California, Arizona and Nevada restaurants. Providing a healthy, plant-based option for guests, the new menu option aligns with Keto, Whole 30, Paleo, vegan, gluten-free and vegetarian eating preferences.
With health benefits, fewer calories and carbs compared to rice, Cauli Rice, is available for an additional $2 as a substitute for rice in any of Rubio’s bowls and burritos. It can also be ordered as a side with any entrée or kids meal.
“Rubio’s guests are incredibly food savvy and appreciate being able to order meals customized to their wellness goals,” said Rubio’s Co-Founder Ralph Rubio. “When Cauli Rice is substituted in place of rice in our California Bowl, the Cauli Rice is just 130 calories with 7 net carbs per serving. It’s an easy swap that tastes delicious with great health benefits.”
Made from riced cauliflower cooked with fresh cilantro, lime juice, lemongrass and sea salt, Rubio’s Cauli Rice is the perfect complement to Rubio’s signature Mexican flavors. Watermelon Strawberry Matcha Pops for A Cooling Summer
Hello, Summer Summer. Summer means ice cream and popsicles! No matter you desire for the summer treats by yourself, or your kids are asking for the summer sweets all the time. It’s always nice to prepare these vivaciously scarlet, collagen-spiked frozen pops in the fridge, which will evoke the carefree, slower days of summer.
Watermelon Strawberry Matcha Pops
Ingredients
- 1 cup watermelon
- 1 cup frozen strawberries
- 2 scoops Primal Kitchen Collagen Quench Triple Berry
- 1/2 cup unsweetened coconut milk (canned)
- 2 scoops Primal Kitchen Matcha Collagen Keto Latte Drink Mix
Instructions
- Place watermelon and frozen strawberries in a blender, and blend until smooth. Add the Collagen Quench and pulse until incorporated.
- Pour the watermelon-strawberry mixture into each frozen pop mold, leaving about 1/2 inch of space at the top of the molds. Place the lids and sticks inside each mold. Freeze for 3 hours.
- Pour 1/2 cup of room-temperature coconut milk into a small bowl or glass measuring cup. Add the Matcha Collagen Keto Latte Drink Mix, and whisk until combined.
- Remove the pops from the freezer, and open the lids. Pour the coconut matcha mix to fill the rest of each pop mold, replace the lids, then place back in the freezer for 1 hour.
- To remove the frozen pops from the molds, place the mold under warm running water; run the warm water over the outside of the pop mold until it’s easy to pull the stick and slide the pop out of the mold.

French Press: Add 2 level measuring tablespoons of coarse ground coffee per six ounce cup of water and adjust to taste. Water temperature should be between 190-195 F (88-90.5 C) degrees. Never add boiling water.
*For an unforgettably intense Bourbon flavor and aroma, add two fully rounded measuring tablespoons of finely ground coffee to each six ounce cup of water. Whole Bean recommended for optimal flavor.
